INGREDIENTS:
- 160 g low fat vanilla (or plain) greek yogurt
- 160 g low fat, small-curd cottage cheese
- 60 g honey
- 2 eggs
- 25 g corn starch
- toppings and flavors as needed
DIRECTIONS:
- Blend all ingredients (except toppings) until smooth
- Pour into 2 2-cup glass meal prep containers, or a 1 large oven save baking dish (about 3-4 cup volume).
- Top with jelly or frozen fruit sparingly (they should float on the top and not over-crowd the surface area).
- Bake at 375 F for 45-55 minutes.
- Best served chilled.
