High-Protein Breakfast Cheesecake

INGREDIENTS:

  • 160 g low fat vanilla (or plain) greek yogurt
  • 160 g low fat, small-curd cottage cheese
  • 60 g honey
  • 2 eggs
  • 25 g corn starch
  • toppings and flavors as needed
DIRECTIONS:
  1. Blend all ingredients (except toppings) until smooth
  2. Pour into 2 2-cup glass meal prep containers, or a 1 large oven save baking dish (about 3-4 cup volume).
  3. Top with jelly or frozen fruit sparingly (they should float on the top and not over-crowd the surface area).
  4. Bake at 375 F for 45-55 minutes.
  5. Best served chilled.

  • Fresh or frozen mixed berries
  • Scoops of jelly or jam
  • Cocoa powder (blended in the mix) topped with chocolate chips or dark frozen cherries
