Greek Yogurt Flatbread

 INGREDIENTS:

  • 1 1/2 cup non-fat Greek yogurt
  • 2 cup self-rising flour
  • pinch of salt
  • olive oil spray for cooking
DIRECTIONS:
  1. In a large bowl, add dry ingredients and mix thoroughly
  2. Add yogurt and stir together with a wooden spoon. Once combined well enough, use hands to thoroughly knead and form into a rough ball.
  3. Transfer dough to a clean, lightly floured surface. Knead with your hands for ~3-5 minutes until you achieve a smooth ball. (If too sticky and wet, sprinkle lightly with flour as needed)
  4. Allow dough to to rest about 10 minutes
  5. Cut dough into 8 equal pieces. On a floured surface, use a rolling pin to roll each ball out flat. Continue to flour the surface and rolling pin as needed.
  6. Heat a pan over medium-high heat and spray with cooking spray.
  7. Cook each flatbread dough 2-3 minutes until you start to see bubbles in the dough. Flip and cook other side for 1-2 minutes. Flatbread should puff up and be golden brown.
