Cottage Cheese Breakfast Freezer Burrito

INGREDIENTS:

  • 1 cup no-fat cottage cheese
  • 18 eggs
  • 2 cup low-fat cheddar cheese (shredded)
  • 1 package Applegate turkey bacon (cooked and diced)
  • 1 package carb-balance burrito-sized tortillas (about 8)
  • diced scallions (optional)
  • salt and pepper to taste
DIRECTIONS:
  1. Scramble eggs, cottage cheese, and seasoning in a large bowl until completely combined.
  2. Pour egg mix into a lightly greased 9x13 baking dish. Bake the turkey bacon at 350 F for about 20 minutes on a baking sheet, at the same time, put the eggs in the oven and bake for about 40 minutes. Make sure to stir eggs periodically to ensure they're cooked evenly and "scrambled".
  3. Dice bacon once cooked thoroughly and add to fully cooked egg dish. Combine with cheese and any other toppings desired and mix thoroughly.
  4. Assemble burritos with mixture. Wrap with plastic wrap and freeze for up to 3 months.

SUBSTITUTIONS:
You can also substitute the turkey bacon with breakfast-style chicken sausage.
