Egg Muffin Cups

INGREDIENTS:

  • 2 Tbs olive oil
  • 4 links Mild Italian Chicken Sausage
  • 1 cup diced red pepper
  • 1 cup diced yellow onion
  • 6 cloves garlic, minced
  • salt
  • Eggs:
    • 4 large eggs and 4 large egg whites, OR
    • 1 1/2 cup egg whites + 2 whole eggs
  • hot sauce (optional as topping)

DIRECTIONS:
  1. Preheat oven to 350 F and generously grease 12 silicone muffin cups with oil. Set aside.
  2. Heat a large skillet over medium heat. Cook: oil, sausage, peppers, garlic, and onion for 5-7 min until tender.
  3. Season with salt and remove from heat.
  4. Combine mixed eggs with cooked vegetables in a separate bowl. Pour egg and vegetable mixture evenly into prepared muffin tin.
  5. Bake for 15-30 minutes or until the tops are firm to the touch and eggs are cooked.
