INGREDIENTS:
- 2 Tbs olive oil
- 4 links Mild Italian Chicken Sausage
- 1 cup diced red pepper
- 1 cup diced yellow onion
- 6 cloves garlic, minced
- salt
- Eggs:
- 4 large eggs and 4 large egg whites, OR
- 1 1/2 cup egg whites + 2 whole eggs
- hot sauce (optional as topping)
DIRECTIONS:
- Preheat oven to 350 F and generously grease 12 silicone muffin cups with oil. Set aside.
- Heat a large skillet over medium heat. Cook: oil, sausage, peppers, garlic, and onion for 5-7 min until tender.
- Season with salt and remove from heat.
- Combine mixed eggs with cooked vegetables in a separate bowl. Pour egg and vegetable mixture evenly into prepared muffin tin.
- Bake for 15-30 minutes or until the tops are firm to the touch and eggs are cooked.
