Zucchini Pancakes

 Ingredients:

  • 2 cups shredded zucchini
  • 1/2 cup flour
  • 1 tbs oil
  • 2 eggs
  • 1/4 cup seasoned bread crumbs
  • 1/4 parm cheese
  • sal, pepper, garlic powder to taste
  • chives
Directions:
  • drain shredded zucchini as much as possible
  • combine all ingredients in large bowl, mix well
  • form into patties about 1/4 inch thick
  • fry in greased pan on high to crisp outside
  • bake at 350 for 15-20 minutes or finish cooking in fry pan
