Italian Sausage Soup

 Ingredients:

  • 1 link sweet Italian Sausage
  • 1 cup chopped onions
  • 2 cloves minced garlic
  • 5 cups beef stock
  • 1/3 cup water
  • 1/2 cup red wine
  • 4 tomatoes (chopped)
  • 1 cup carrots (chopped)
  • 1 cup tomato sauce
  • 1 zucchini (chopped)
  • 8 oz tortellini
  • 1 tbs chopped parsley
  • spinach (optional)
  • 1/2 tsp dried basil + oregano
  • 1 green bell pepper (chopped)
  • 2 tbs parm cheese (grated)
Directions:
  1. Place sausage in large pot over medium heat and saute for 10 min or until well browned
  2. Drain fat
  3. Add onions and garlic. Saute for 5 min
  4. Add
  • beef stock
  • water
  • wine
  • tomatoes
  • carrots
  • basil + oregano
  • tomato sauce
  1. Bring to boil, reduce heat to low and simmer for 30 minutes (skimming fat that may surface)
  2. Add
  • zuchchini
  • tertellini
  • green bell pepper
  • parsley (to taste)
  1. Simmer for 10 minutes or until tortellini is fully cooked
  2. Pour into bowls and garnish with cheese
  3. Serve
