Ingredients:
- 2 Tbs olive oil
- 2 chopped onions
- 4 cloves garlic, minced
- 2 chopped chicken breast
- 2 chopped hot sausage
- 2 cans (14.5 oz) chicken broth
- 3 chopped long peppers (or green chilies)
- 2 tsp cumin
- 2 tsp dried oregano
- 1 1/2 tsp cayenne pepper
- 5 (14.5 oz) cans great Northern beans, drained
- Monterey Jack cheese
- 1 cup ricotta cheese
Directions
- In large skillet, heat oil add onions and garlic. Saute for 10 minutes. Add chicken and sausage to brown.
- Add chicken broth, green chilies, spices in large pot and bring to boil. Add contents of skillet stir until it returns to boil.
- Reduce heat to low and add beans and ricotta.
- Simmer 20-30 minutes (or until heated thoroughly) stirring occasionally
- Serve topped with cheese. Best in bread bowl.
