Golden Chili

 Ingredients:


  • 2 Tbs olive oil
  • 2 chopped onions
  • 4 cloves garlic, minced
  • 2 chopped chicken breast
  • 2 chopped hot sausage
  • 2 cans (14.5 oz) chicken broth
  • 3 chopped long peppers (or green chilies)
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 1 1/2 tsp cayenne pepper
  • 5 (14.5 oz) cans great Northern beans, drained
  • Monterey Jack cheese
  • 1 cup ricotta cheese

Directions
  • In large skillet, heat oil add onions and garlic. Saute for 10 minutes. Add chicken and sausage to brown.
  • Add chicken broth, green chilies, spices in large pot and bring to boil. Add contents of skillet stir until it returns to boil.
  • Reduce heat to low and add beans and ricotta.
  • Simmer 20-30 minutes (or until heated thoroughly) stirring occasionally
  • Serve topped with cheese. Best in bread bowl.
