INGREDIENTS
- 6 large eggs
- 2 cups half and half
- sprinkle of nutmeg and cinnamon
- 1/2cup all-purpose flour
- 1/2cup milk, preferably whole
- 1/4teaspoon kosher salt
- 1/2teaspoon vanilla extract
- 2tablespoons unsalted butter
- 2 peeled and diced apples
- 1/3 cup brown sugar
- confectioners sugar (optional)
DIRECTIONS
- Heat oven to 400° F.
- Core, peel and dice apples. sprinkle with brown sugar and set aside.
- In a large bowl, whisk the eggs and half & half to combine. Add the flour and whisk until smooth. Add the milk, salt, and vanilla and mix until incorporated; set aside.
- Add the butter to a large cast-iron skillet and heat the butter melts. Add apples and brown sugar until warm and carmelized. Put in oven and bake until the pancake is puffed and golden, about 25-30 minutes or until it rises around the pan and is golden brown.
- Sprinkle with the confectioners' sugar (optional).
