German Apple Pancake

 INGREDIENTS

  • 6 large eggs 
  • 2 cups half and half
  • sprinkle of nutmeg and cinnamon
  • 1/2cup all-purpose flour
  • 1/2cup milk, preferably whole
  • 1/4teaspoon kosher salt
  • 1/2teaspoon vanilla extract
  • 2tablespoons unsalted butter
  • 2 peeled and diced apples
  • 1/3 cup brown sugar
  • confectioners sugar (optional)


DIRECTIONS
  • Heat oven to 400° F. 
  • Core, peel and dice apples. sprinkle with brown sugar and set aside.
  • In a large bowl, whisk the eggs and half & half to combine. Add the flour and whisk until smooth. Add the milk, salt, and vanilla and mix until incorporated; set aside.
  • Add the butter to a large cast-iron skillet and heat the butter melts. Add apples and brown sugar until warm and carmelized. Put in oven and bake until the pancake is puffed and golden, about 25-30 minutes or until it rises around the pan and is golden brown.
  • Sprinkle with the confectioners' sugar (optional).
