Ingredients:
- 1-1/2 Cups Flour
- 3 Teaspoon Baking Powder
- 1 Teaspoon Salt
- 1 Egg
- 1/2 Cup Sugar
- 1/3 Cup Vegetable or Olive Oil
- 1-1/4 Cup Milk, Sour Milk or Buttermilk
- 1 Cup Cornmeal
- Optional: Parsley or herb to sprinkle on top (or in flour mixture)
- Blend together cornmeal and milk, and allow to soften while you prepare the other ingredients.
- Mix together flour, baking powder and salt in a small bowl and set aside.
- In a larger bowl, blend together egg, sugar and oil.
- Add cornmeal and flour mixtures alternatively to egg, sugar and oil.
- Blend just enough to mix well.
- Drop into greased regular size muffin tins.
- Add a sprinkle of your favorite herb or parsley to the top of the muffins.
- Herbs could be included in the flour mixture as well.
- For a variation, you can add a sprinkle of grated cheese to the top of these muffins.
- Bake at 375 degrees for 12-15 minutes until done.
- Makes 12 cornmeal muffins.
- Serve warm with your favorite meal.
