Beer Batter Chicken Parm

 The Batter:


Wet Ingredients
-3/4 cup flour
-3/4 cup stale beer
-salt to taste
-1 tbsp. melted butter or vegetable oil
-1 egg yolk
-6 split chicken breasts

Dry Ingredients
-1 cup flour
-1 cup bread crumbs
-1/2 cup corn meal
-1/4 cup parm cheese

Directions
-Mix dry ingredients and set aside
- Mix:
  • flour
  • beer
  • salt
  • butter
    until there are just a few lumps.
- Cover and let stand 2-3 hours
- Just before coating chicken, stir in egg yolk
- Beat white until stiff and fold into batter
- Dip each chicken breast in wet mixture, then coat with dry mix until fully coated
- Deep fry or pan fry until crisp on outside (about 5 minutes)

The ziti:
Ingredients
-1 box ziti
-1 jar pasta sauce
-1 bag mozzarella cheese

Directions
- Preheat oven to 400 degrees
- Cook pasta in boiling water
- Lightly grease large pyrex baking dish with butter and fill 3/4 with cooked pasta
- Pour pasta sauce over pasta in dish (about 3/4 of the jar)
- Place battered and fried chicken in dish
- Cover lightly with mozzarella cheese
- Bake in oven for 30-40 minutes until done (cheese should be lightly brown and melted)
