Ingredients:
- 1 large onion
- 3 large jalapeno peppers (red and/or green)
- 2-3 lb. ground beef
- 2 large cans tomatoes
- 1 small can tomato paste
- 1 can drained kidney beans
- 1 can drained black beans
- 2 cups corn kernals
- 3 large cloves garlic (minced, chopped, or crushed)
- 3 Tbsp. onion power
- 3 Tbsp. garlic powder
- 3 Tbsp. chili powder
- 2 Tbsp. cumin
- 1-2 Tbsp. parsley
- 1-2 Tbsp. oregano
- 1 Tsp. salt
- 2 Tsp. black pepper
- 2 strips bacon (pre-cooked)
- 2 Tbsp. fine cornmeal
- 1/2 cup red wine vinegar
- 6 oz. whiskey
- combine spices and herbs in container, and set aside
- rinse beans and combine in large bowl with chopped onion, corn, and pepper
- add tomato cans and vinegar in crock pot, cover, and keep on low
- cook bacon in pan, pat dry of grease, chop into bite-size peices and add to crock pot
- brown meat in pan with spices, add to crock pot
- sautee veggies and beans in pan with chopped garlic, add to crock pot
- cook on high for 15 minutes, reduce to low for 40 min
- add whiskey and stir, let simmer on low for 15 minutes
- enjoy in bread bowl with shredded cheese, sour cream, and a good beer
