Ingredients:
- 1 cup milk
- 1/2 cup finely chopped parsley
- 1 finely chopped garlic clove
- 1 small minced onion
- 2 cups cooked rice
- 1/2 cup shredded sharp cheese
- 1/8 tsp curry powder
- 2 tbs olive oil (for greasing baking dish)
Directions:
- Preheat over to 325 F
- Puree milk, parsley, and garlic until a smooth mixture
- Mix pureed ingredients with onion, rice, cheese, and curry powder thoroughly in a large mixing bowl
- Grease a baking dish with olive oil (7" round or 2-quart casserole dish will be adequate)
- Bake for 30 min
- Top with extra cheese if desired
Substitute sharp cheddar cheese for pecorino romano/parmesean
